Fortified breakfast cereals and their taste

While enjoying a bowl of cereal in the morning and gazing at the cereal box, you would notice the phrase ‘fortified with vitamins and minerals.’  This means our cereals are enriched with nutrients such as riboflavin, iron, thiamine and folic acid. Addition of these nutrients allows us to meet our daily dietary recommendations of these vitamins and minerals and prevent any dietary deficiencies.

When producing these cereals it involves looking at the taste of the product. With addition of these vitamins and minerals we can see whether the taste has been affected in any way such as bitter metallic taste and alter ingredients accordingly.  Usually a sensory panel is used to test differences in taste, however this is time-consuming and expensive.
